22 g of Saf-Instant yeast
500 g of flour
125 g of butter
75 g of sugar
1 tsp of salt
500 ml of warm water
3 eggs
4 tbsp of orange blossom water
lemon zest
orange zest
1 egg for brushing


Put all the ingredients in a bowl and knead energetically until the dough is smooth  and even.

Cover the dough and leave it to rest in a warm place away from any draughts for  30 minutes.

Divide the dough into 3 equal pieces, and roll them to form 3 long logs. Form a plait.

Make it into a crown shape. Place it on a baking tray lined with baking paper, cover and leave to double in size.

Brush with egg and sprinkle with pearl sugar and flaked almonds.

Bake in preheated oven at 190°C/Fan 170°C/Gas Mark 5 for 30 minutes, check it is baked by inserting the blade of a knife,
it will come out clean if cooked.
