For 6 people


200 g of sugar
50 g of icing sugar
1 kg of flour
11 g of Saf-Instant yeast
6 eggs
Vegetable oil for frying
1 glass of water (20 cl)


Beat the eggs well. Add the quick-rising yeast, the sugar, the water and the flour. 

Knead until the dough becomes smooth. Cover and leave to rest for 1 hour 30 minutes.

Spread the dough out on a floured work surface and cut into circles with a circle cookie cutter or a glass. 

Leave to rest for 30 min.

Heat the oil in a large pan. Plunge a fritter and fry it until it is golden and puffy. Drain it on absorbent paper. Repeat for the other fritters. 

Sprinkle with icing sugar before serving.
