02 May Goat’s cheese, dried fig and spiced bread

100 ml of warm water
4 tablespoon of yoghurt
1 tablespoon of oil
1 teaspoon of salt
1 teaspoon of ground cinnamon
1 teaspoon of ground ginger
1/2 soft-set goat’s cheese
6 to 8 dried figs, cut into strips
300 g of flour
1 teaspoon of Saf-Instant yeast
2 teaspoons of honey
1 teaspoon of caster sugar
To make with a bread machine:
Put all the ingredients into the bread pan in the order in which they are listed. select the sweetened bread programme for a 750 g loaf with extra browning.
To make by hand:
Mix all the ingredients together in a basin. Wrap in oiled clingfilm and set aside in a warm place.
When the dough has risen, preheat a baking tray in the oven at 240°C.
Form the dough into a ball and leave to rise again.
Bake in the oven for 25 to 30 minutes.
