01 May Little pizza-style croissants

For 15 little croissants
1 sachet of Saf-Instant yeast (11 g)
500 g of flour
5 g of salt
290 g of warm water
150 g of mozzarella
1 egg yolk for the egg wash
In a bowl, mix the flour and salt.
Add the warm water and the Saf-Instant yeast and mix well.
Knead to a soft, non-sticky dough.
Put a tea towel over the bowl and leave the dough to rise for 1 hour.
Roll out the dough and cut into 15 small triangles.
Cover with tomato sauce.
Put a piece of mozzarella in one corner of each triangle.
Roll the triangles up from the long edge to the point.
Brush the croissants with egg yolk.
Sprinkle with oregano.
Bake for 20 minutes at 180°C.
Tip: The mini-croissants can be served hot or cold.
