02 May Pancakes

1 sachet of Saf-Instant yeast (11 g)
250 g of flour
65 g of sugar
250 ml of milk
1 pinch of salt
In a mixing bowl, combine the flour, sugar, salt, and the Saf-Instant. Next, incorporate the milk and the eggs and whisk gently.
Ladle a small amount of the mixture into a hot, lightly oiled frying pan, immediately spreading the mixture around the pan with a twist of the wrist.
When bubbles appear at the surface, turn the pancake over and cook for a few seconds on the other side.
Serve the pancakes hot with the topping of your choice (maple syrup, jam, chocolate, etc).
