12 May Pizza with Mediterranean vegetables

For the dough
1 sachet of Saf-Instant yeast (11 g)
500 g of flour
280 ml of water
15 g of salt
30 ml of olive oil
For the topping
Green or black olives
½ red, yellow or green pepper
45 ml of tomato purée
150 g of mozzarella
Herbes de Provence
15 ml of olive oil
Preparing the dough
In a bowl, pour in the flour, make a well and add the water and salt. Mix and add the olive oil then the Saf-Instant yeast.
Mix to a smooth dough.
Make a ball and leave to rise for 1 hour at room temperature. Cover with a tea towel.
Roll out the dough to the appropriate size and thickness. Lightly pinch the edges of the dough.
Leave to rest for another 30 minutes.
Preparing the topping
Finely slice the courgette, pepper and aubergine. Spread onto a baking tray, brush with olive oil and grill.
Cut up the mozzarella.
Preheat the oven to 200°C.
Put the pizza dough on a baking tray covered with baking paper. Cover with tomato purée then top with mozzarella, grilled vegetables and olives. Sprinkle
with herbes de Provence.
Bake at 200°C for 15 minutes and serve immediately.
Tip: cut the pizza into small pieces and serve on a wooden board.
