Par cette d\u00e9marche, vous r\u00e9duisez en priorit\u00e9 les risques sanitaires pour vos consommateurs, tout en limitant le gaspillage alimentaire. Avec des produits aux caract\u00e9ristiques intactes, vous ma\u00eetrisez davantage la qualit\u00e9 de vos productions et gagnez en productivit\u00e9.<\/p><h2><span style=\"color: #dd0634;\">Stockage au froid\u202fpositif : les r\u00e8gles d\u2019or<\/span><\/h2><p>La conservation au froid positif, c\u2019est-\u00e0-dire dans un r\u00e9frig\u00e9rateur entre 0 et 4\u00b0C (au point le plus froid), vous permet de pr\u00e9server les qualit\u00e9s de vos denr\u00e9es et produits frais, avec des dur\u00e9es variant selon la nature et le degr\u00e9 de pr\u00e9paration (mati\u00e8re premi\u00e8re, produit semi-fini, produit fini). Quel que soit le produit, il est recommand\u00e9 de\u202f:<\/p><ul><li>Tenir compte des informations indiqu\u00e9es sur les produits emball\u00e9s\u202f: DLC (Date limite de consommation), DDM (Date de durabilit\u00e9 maximale), conditions de conservation du fournisseur (temp\u00e9rature, stockage).<\/li><li>Respecter la cha\u00eene du froid en limitant au maximum les interruptions.<\/li><li>Ne pas recongeler des aliments d\u00e9j\u00e0 d\u00e9congel\u00e9s.<\/li><li>Conserver s\u00e9par\u00e9ment les aliments crus et les aliments cuits.<\/li><li>Indiquer sur vos contenants la date \u00e0 laquelle les pr\u00e9parations ont \u00e9t\u00e9 faites.<\/li><li>Contr\u00f4ler r\u00e9guli\u00e8rement la temp\u00e9rature de votre r\u00e9frig\u00e9rateur.<\/li><\/ul><h2><span style=\"color: #dd0634;\">Conseils pour bien conserver\u2026<\/span><\/h2><ul><li><strong>Les \u0153ufs et produits laitiers : l<\/strong>es pr\u00e9parations \u00e0 base d\u2019\u0153ufs crus comme la mousse au chocolat ou la mayonnaise se conservent 24 h. La cr\u00e8me fra\u00eeche et le lait cru se conservent jusqu\u2019\u00e0 3 jours \u00e0 6\u00b0C maximum. Quant au beurre, vous pouvez le garder 3 \u00e0 6 semaines au frais.<\/li><li><strong>Les garnitures de p\u00e2tisserie et produits \u00e0 base de cr\u00e8me :<\/strong> les p\u00e2tisseries \u00e0 base de cr\u00e8me ou p\u00e2te \u00e0 chou comme les millefeuilles et les \u00e9clairs peuvent se conserver 48 h \u00e0 7\u00b0C maximum (\u00e0 temp\u00e9rature ambiante, les viennoiseries \u00e0 base de cr\u00e8me p\u00e2tissi\u00e8re cuite peuvent rester 12 h). Comptez 10 jours de conservation pour les garnitures pr\u00e9par\u00e9es \u00e0 l\u2019avance comme les ganaches, la frangipane ou le pralin\u00e9.<\/li><li><strong>Les viandes et garnitures \u00e0 base de viande :<\/strong> les viandes crues et viandes hach\u00e9es se conserveront 2 jours \u00e0 2\u00b0C, tandis que les pr\u00e9parations \u00e0 base de viande cuite pourront se garderont bien emball\u00e9es jusqu\u2019\u00e0 3 ou 4 jours, \u00e0 4\u00b0C maximum.<\/li><li><strong>Les poissons et crustac\u00e9s :<\/strong> les poissons frais et fruits de mer crus peuvent se conserver jusqu\u2019\u00e0 2 jours dans la zone la plus froide, entre 0 et 2\u00b0C. Les poissons, mollusques et crustac\u00e9s cuits peuvent se conserver 3 \u00e0 4 jours.<\/li><li><strong>Les fruits, l\u00e9gumes et garnitures \u00e0 base de fruits :<\/strong> les l\u00e9gumes et fruits frais entiers conservent toutes leurs qualit\u00e9s au frais pendant 3 \u00e0 4 jours. Pour les fruits et l\u00e9gumes coup\u00e9s, utilisez-les dans les 24 h, en v\u00e9rifiant l\u2019aspect et la couleur. Les salades de fruits se conservent quant \u00e0 elles jusqu\u2019\u00e0 48 h dans un contenant
