Method

  • Type of dough mixer: Stand mixer
  • Kneading: 4 min on the first speed and then 8 min on the second speed
  • Dough temperature: 18.3°C
  • First proving: 1 hour at room temperature, then 2 hours in the refrigerator
  • Shaping: Stretch and fill the dough, braid it and place it in a round mold with a diameter of 20cm
  • Final proving: 90 minutes at room temperature
  • Baking: 55 min at 160°C
  • Final temperature check: Use a probe thermometer to ensure that the internal temperature of the bread reaches 92°C

If you want to save time, you can prep the dough a day ahead and let it ferment overnight in the refrigerator.
It’s important to let the bread cool down before slicing it to avoid compressing the crumb.

  • To make the bread more visually appealing, you can experiment with different shapes and decorations, such as adding sesame seeds or poppy seeds on top of the bread. 
  • For a more savory version, try adding ingredients such as herbs, spices, or cheese to the dough.
