Method

  • Type of dough mixer: Spiral
  • Kneading: 3 min at low speed, 8 min at high speed
  • Dough temperature: 28°C
  • First proving : 10 min.
  • Division: Divide into balls weighing 50g
  • Shaping : Twist and round on a baking sheet
  • Final proving: 60 min at 36°C
  • Baking: 15 min at 180°C
