Method

  • Type of dough mixer: Stand mixer
  • Kneading: Low speed 40 minutes
  • Dough temperature: 26°C
  • First proving: 12-15 hours ferment in fridge, followed by 60 minute at room temperature 
  • Division: 125g * 6pcs
  • Resting: 20 Min
  • Shaping: Round, forming balls
  • Baking: 15-20 min at 180°C
 

All ingredients should be refrigerated to cool overnight or 30 minutes – 1 hour in advance.

When adding the strawberry filling, make sure to leave a 2 cm gap around the edges. This will ensure the filling doesn’t leak out when you’re rolling the dough into a log. 

Get creative and try other types of fruit or jam fillings to change things up. Raspberry jam, cherries, peaches, or blueberries could all make for a delicious filling combination.
