Orange blossom rolls

What if you were to add some orange peel to give it an exotic note and charm your customers? They will be more than happy to experience this new oriental flavour!
The round shape of the orange blossom roll is reminiscent of a brioche, but it is actually a white bread inspired by “Roti Manis”, an Indonesian recipe. Its delicious chocolate flavour and aroma make it perfect for a snack or breakfast. Children love it, and adults seem to enjoy it too!

Method

  • Type of dough mixer: Spiral
  • Kneading: 3 min at 1st speed setting + 5 min at 2nd speed setting. Mix in the ingredients at 1st speed setting
  • Dough temperature: 26°C
  • First proving : 60 min.
  • Division: Divide into balls weighing 100g, placed so that each ball is stuck.
  • Final proving: 30 min at 26°C.
  • Baking: 12 min/240°C with steam.

You should store the ingredients to be mixed into the dough in a cool or cold place, before adding them to the dough mixer.

The ingredients can be mixed in together or one after the other at your convenience.
